Ingredients:
1 small fish fillet of your choice
1 small - medium potato of your choice
1 tsp chives
1 tbsp mixed frozen veg, defrosted
50g mild cheddar, grated
½ small egg, beaten
oil, for greasing
Step 1: Get Ready
- Preheat your oven to 200°C (180°C fan, Gas Mark 6).
- Wrap the potato in foil and pop it on a baking tray. Roast for about 1 hour and 15 minutes.
- Wrap the fish in foil and add it to the same tray. Keep baking for another 10-12 minutes until the fish is cooked through and opaque.
Step 2: Prep the Base
- Once everything's cooked, slice the potato in half and scoop out the insides.
- Flake the fish, make sure there are no bones and toss away the skin.
Step 3: Make the Croquettes
- Lightly oil a baking tray.
- Mash up the potato and mix it with the fish, veggies, chives, cheese, and egg.
- Let the mix cool a bit. Then, shape it into small croquettes.
- Lay them on a foil-lined tray and let them chill in the fridge for 30 minutes. For freezing, pop the tray in the freezer until solid. Once frozen, transfer the croquettes to a freezer bag. Thaw thoroughly in the fridge before cooking.
Step 4: Cooking Time
- Heat your oven to 200°C (180°C fan, Gas Mark 6).
- Arrange as many croquettes as you need on a baking tray.
- Bake for about 15 minutes until they're golden brown and cooked through.
- Make sure they're heated all the way through before serving to your little one. Let them cool down properly before serving. Enjoy!
